How to make a Pidan egg, a 1000-year-old egg

According to Chef Kosim Ridwan from Hong Kong Sheng Kee Dessert Kelapa Gading Mall, the steps to make pidan egg are similar to the steps for making salted egg.
 

“It is similar to making salted egg, but what makes it black is the mix of salt, sand and ash, grain and brick or clay,” Kosim said.

Those ingredients will be mixed and rubbed on a duck egg before being left for months. Because of the long process, pidan egg is also called the 1000-year-old egg. Chinese people believe that eating pidan egg will lengthen your life. Because of its fermentation system, the egg is believed to be nutritious.
